Hygienic and quality assessment of milk have the primary role in the diet and health of every consumer. Contemporary work in the production, preparation, primary processing, milk processing and storage of milk, looks for well- organized laboratory services contro on the all way from the barn and producers to dairies and distribution or storage of milk.
In this work, the content of dry matter, relative density, acidity, temperature and water content, are analysed and the emphasis is placed on the determination of acidity of milk. The examination was conducted at five ransom areas, and the goal of the research is to monitor and determine the acidity of the milk, following additional parameters: milk temperature, dry matter content, relative density and water conten. The reasons for screening the quality and hygienic validity of milk are essential from the sanitary, economic, technological and scientific point of view.
