Abstract

In various packaging forms, materials are found directly or indirectly related to the packaged food 
product and for that reason, they must meet the requirements that enable complete, or within 
acceptable limits, health and hygienic food safety. During the interaction process of packaging-food 
contact, the migration of packaging components into packaged food and vice versa may occur. 
Knowing there are almost no materials being completely inert when in direct contact with food, this 
paper will describe the interaction phenomena of mass transfer, primarily related to metal packaging.
